Warm Orange Chicken Salad

A flavour packed salad where the combination of ingredients is key to its unique flavour (Serves up to 3 people, although 2 people could also easily finish this off)

  • 2 Oranges peeled and chopped
  • Half a cos lettuce
  • 1 Lebanese cucumber chopped
  • 1 bunch of asparagus (Sauteed in butter for 5 minutes, or steamed)
  • 4 spring onions
  • 3 slices of whole grain bread (Vogels is best)
  • 2 tbsp of olive oil
  • 2 tsp italian herbs (basil thyme and oregano will do)
  • 500 grams chicken thigh cutlets bone out and chopped
  • 2 tsp paprika
  • a good grind of sea salt and 2 tbsp olive oil
  • 2 tbsp raspberry wine vinegar (or red wine vinegar)
  • 1 1/2 tbsp honey
  • 2 tsp Dijon mustard
  • 3 tbsp Orange juice
  • Juice from one lime
  1. Firstly chop up your chicken and put into a bowl with paprika, sea salt and olive oil. Cover and refrigerate.
  2. Chop into small cubes your wholemeal bread and fry in 2 tbsp olive oil and Italian herbs until crunchy ( way better than ready made croutons ). Set aside in a bowl.
  3. In a jug melt your honey and then add raspberry wine vinegar and Dijon mustard. Once combined then add orange juice. Set aside.
  4. In a large mixing bowl place the lettuce, cucumber, asparagus, spring onions and oranges and combine.  Leave in fridge while you cook chicken.
  5. Take your chicken, paprika, sea salt marinade and fry until chicken is slightly crispy on the outside.
  6. In your mixing bowl with salad vegetables add the cooked chicken, croutons and dressing. Combine and serve immediately.
