A healthy blend of fresh fruit and vegetables with a simple dressing. (Serves 1)

Tropical Brunch Salad

  • Handful of baby spinach leaves chopped finely
  • Half an avocado chopped
  • 5 cherry tomatoes quartered
  • Half an apple chopped finely
  • 4cm long piece of cucumber chopped finely
  • 1cm slice from a fresh pineapple (take outside and centre off)
  • 1 tsp honey
  • 1 tsp mild mustard
  • 1 tbsp red wine vinegar
  1.  Take the first 6 ingredients and prepare them. Throw into a large mixing bowel. NOTE: Substitute pineapple with 6 strawberries quartered when in season.
  2.  In a pyrex jug place the honey and microwave for 8 seconds or until runny.  Add the mustard and red wine vinegar and combine thoroughly
  3.  Add the dressing to the mixing bowl and combine.
  4.  Turn out into a salad bowl and enjoy
